Don’t Forget Your Vegetables

I don’t consider myself a picky eater, but there are a few things that I don’t really care for. Andrew thinks I’m weird for not liking nuts (it’s a texture thing) and melons (I only like watermelon). Mushrooms are not a favorite of mine, although I still put them in recipes for Andrew. And like a lot of people, there are some vegetables I don’t care to eat. I have found a recipe for carrots that I actually like (I’ll post that recipe soon), and I like the Brussels sprouts Andrew makes (with bacon), but now I have a recipe that gets me to eat peas. It’s not my favorite recipe (because of the peas!), but Andrew likes it, and it gets me to eat a vegetable I usually avoid.

Spaghetti Pie
Active time: 20 minutes
Total time: 1 hour
Makes: 6 main-dish servings

DSCN03221 lb. spaghetti4 strips bacon, chopped (I added 2 extra slices to help cover the taste of those peas!)
1 lg. red onion (10-12 oz), finely chopped
1 container (15 oz) part-skim ricotta cheese
4 lg. eggs
2 c. 2% milk
1/4 tsp. cayenne (ground red) pepper
1 c. freshly grated Parmesan cheese
Salt
2 c. frozen peas (I would happily decrease this to 1 cup…)

1. Preheat oven to 350F.
2. Heat large covered pot salted water to boiling on high. Cook spaghetti as package directed.
3. Meanwhile, in 12-in. skillet, cook bacon on medium 6-8 minutes or until crisp, stirring occasionally. With slotted spoon, transfer bacon to paper towels to drain To fat in pan, add onion. Cook 4 minutes or until tender, stirring occasionally.
4. While onion cooks, in very large bowl, whisk ricotta, eggs, milk, cayenne, half of Parmesan, and 1/4 teaspoon salt.
5. Drain spaghetti well. Stir into ricotta mixture along with peas, bacon, and onion. Spread in even layer in 3-quart shallow baking dish. Sprinkle remaining Parmesan on top. Bake 30-35 minutes or until set.

If following the recipe above (no extra bacon or higher fat milk or ricotta), each serving has about 660 calories, 36 g protein, 76 g carbohydrates, 23 g total fat (11 g saturated), 6 g fiber, 175 mg cholesterol, and 700 mg sodium.

Winter Weather has Arrived!

Well, we didn’t have a white Christmas, but we’ve definitely been getting a taste of snow now that we’ve rolled into 2013. We got sent home early one day last week from base due to weather, but our most recent snowfall was over the weekend. I absolutely love our backyard, and I think it’s especially pretty when it’s all snow-covered.
DSCN0294Andrew is really hoping that his onions and leeks aren’t done for with all this snow… he went and tried to give them some plastic tunnels over the weekend. We’ll see if it helps at all!

We were pretty lazy this weekend, and I’m sure the snow and cold didn’t help! The dinner I made last night seemed like the perfect “cold weather comfort food.” I made Bacon Mac & Cheese, and it was really yummy! It was nice to just have a bowl of cheesy pasta to eat while we watched “CSI” and “Star Trek.” We switch off shows to watch to be fair. 🙂 I know you all don’t think I watch “Star Trek!”

Not sure how much more snow we’ll be getting this winter, but I’m still hopeful for a snow day!

Updates on Life!

Wow, very long time since I have posted anything! It has been a busy fall for me, and I’m sorry I fell off the grid for awhile there. Time for some updates on our life…

1. I got a job!
I applied for a job at the end of July, got called in for an interview in August, and started the paperwork process at the end of August and beginning of September. I am working at one of the Child Development Centers on base, and I’m currently working with the Pre-Toddler age group (1 year old kids). I’m working close to full-time (between 30-40 hours a week), so it has really cut down on my free time! And that’s the main reason my blog has been quite neglected over the past few months.

2. I had a trip back to the States!
My friend, Laura, asked me to be her maid-of-honor for her wedding the day before we moved to England last year. I immediately said yes, before really thinking about the cost of following through with that! Thankfully, I was able to get back to Wisconsin for her wedding, and I got to see quite a bit of my family as well! I only flew back for 11 days in October, but it was a great trip. Still have to get those photos off of my camera…

3. Still busy with NKCrochet
While I did see a little decline in orders over the warmer months, I filled up my Christmas Orders list before the end of September! I kept my list short, since I wasn’t sure how much free time I would have with the new job, but I’m still only a little over halfway through my orders. I’ve been crocheting on my lunch breaks (got a few other orders at work just because of that!), and after dinner I get a fair amount done as well. Needless to say, my chore chart has been a bit neglected lately…

I hope to get some posts up soon about some of the day trips we took in August, new recipes I’ve tried, and my trip home last month. Hopefully the upcoming long weekend we have (for Veteran’s Day) will give me some extra time for all of that!
